Natural wine is a wine made without any additives, meaning no industrial yeasts, no enzymes, no oenological additives, and no chemical products. Fermentation relies solely on indigenous yeasts, naturally present on the grape skins, stems, and in the cellar.

Sourced from organic or biodynamic farming, these wines follow a natural set of standards, allowing for authentic production that is healthier and always deeply faithful to the vintage: its climate, through the changing of all seasons, like a reconnection to the earth through taste.

Every natural wine, whether red, white, rosé, pétillant naturel, French white, or even vin jaune, reflects the soil, the year, the climate, and the winemaker’s style.

Choosing a natural wine means opting for an approach that respects both nature and your health.

Healthy farming, often organic and biodynamic, completely eliminates the use of pesticides, herbicides, and petrochemical fertilizers. It promotes living soil, rich biodiversity, and vines that produce healthy, concentrated grapes.

Natural wines offer:

  • a purer expression of the fruit
  • clean aromas, sometimes fresher, sometimes more floral or more vibrant
  • a light, fluid, or fuller structure depending on the cuvée
  • remarkable drinkability, with no heaviness
  • an authentic style, far from standardised conventional wines

Contrary to popular belief, natural wine is not reserved for special occasions: there are many affordable, accessible, and surprising cuvées available.

By choosing a natural wine, you support committed winemakers, often family estates working with artisanal techniques and a philosophy that respects the living world.

Every cuvée has its own personality. To choose your natural wine, here are the key criteria:

The style of the wine

  • Fruity red, light or more structured
  • Clear, fresh or mineral white
  • Natural rosé with red fruit notes
  • More tannic, gastronomic orange wine
  • Lively, spontaneous pétillant naturel

The grape variety

The grape variety strongly influences the aromatic profile:

  • Pinot Noir, Gamay, Grenache Noir, Syrah, Cabernet Franc, and countless other varieties for reds and rosés (and sometimes whites!)
  • Chenin, Sauvignon Blanc, Chardonnay, and countless other varieties for whites and orange wines
  • and of course, their blends

The wine region

Each region of France has its own signature:

  • Loire: fresh, digestible, expressive profiles
  • Burgundy: finesse, terroir, and delicacy
  • Provence: sunny elegance, Mediterranean aromatics
  • Champagne: precision, tension, complexity
  • Rhône: full-bodied, fruity, sometimes spiced wines
  • Languedoc: diversity, ripeness, and aromatic richness
  • Roussillon: power, depth, Mediterranean character
  • Alsace: aromatic purity, precision, verticality
  • Corsica: strong identity, salinity, island brilliance
  • Savoie: tighter, very digestible wines
  • South-West: noble rusticity, indulgence, character
  • Jura: oxidative finesse, tension, singularity
  • Beaujolais: vibrant fruit, freshness, granite
  • Bugey: mountain character, liveliness, rusticity

The estate

Each estate and each winemaker uses their own method, philosophy, and level of intervention: low-temperature fermentations, shorter or longer macerations, light or no filtration, always in pursuit of the purest expression of terroir and genuine pleasure.

While every region and grape variety brings its own variations, you will often find:

  • a natural freshness linked to the acidity of the grape and the subsoil (the bedrock)
  • notes of vibrant fruit
  • a lively, fluid, and digestible palate
  • a slightly hazy, clear colour (due to lack of filtration)
  • sometimes a light natural spritz from carbon dioxide
  • a non-standardised style, sometimes wilder but always authentic

Natural wines give more of a sense of drinking a living juice, a wine that expresses its terroir without disguise, with true aromatic and textural sincerity.

Natural winemaking follows an artisanal process based on minimal intervention.

  • Hand harvesting
  • Careful sorting
  • Slow pressing and/or maceration, depending on the desired style
  • Spontaneous alcoholic fermentation using indigenous yeasts
  • No additives, no corrections
  • Ageing in tanks, large oak barrels, amphorae, barriques, casks
  • Bottling with little or no filtration, preferably without added sulfites

This method aims to preserve the identity of the grape, the texture of the wine, and its natural energy.

Natural wine is surrounded by many myths:

“It’s too expensive.”

“There are no sulfites.”

half lioness, daughter of Râ, the Sun god.

ABOUT

CAAAAAAAT wines are micro-cuvées made with healthy grapes, from vines grown with care. 

I created my first CAAAAAAAT cuvée in 2019 with my friend Fabien Jouves. I still thank him for giving me the confidence to vinify without a safety net.

Today I work as a collective with my winegrower friends, women and men, committed to healthy agronomy and natural winemaking.

The only thing guiding our cat steps is respect for the living world and taste.

Because that is what wine is: a free pleasure, an act of sharing.
Because that is what Caaaaaaat is: the freedom to live and break free from the world, laughing.
