Lemon yellow colour, straw-coloured reflections
This dry white wine is a discharge of lively acidity, a burst of freshness. The citrus fruit sparkles, carried by a biting mineral texture. The finish is clean, a crystalline wave that awakens the senses and leaves you salivating.

Idéal, légèrement rafraîchi
Lowland vineyards with soils composed of schist and limestone alterations.
Biodynamic viticulture. Hand-picked harvest, with grapes sorted on the vine. Spontaneous fermentation (indigenous yeasts), vinification without added sulphites, bottling without filtration, clarification nor addition of sulphites. The ingredients used are simple: healthy grapes.
Chenin Blanc: Varenne du Poirier plot, soils of grey-black schist. East-west exposure on a high plain. Vines planted in 2009. First matured for 6 months in 225-litre barrels, then matured in fiberglass vats.
Cabernet Franc: Champ du Moulin plot, soils of altered limestone and sandstone schists from the Tertiary period (23.5 to 5.3 million years ago). Vines planted in 2010. Direct pressing of deliberately under-ripe grapes. The slightly pink colour of the first juices disappears after settling. Aged in stainless steel vats.
Early blending of the two grape varieties after vinification. Bottled according to the lunar cycles.
This wine was created by Christophe Kaczmarek and Jean-François Vaillant, natural winemaker at Domaine Les Grandes Vignes in Black Anjou.
The wines are made, blended, bottled and packaged on the estate. From the vine to the cellar, everything is done with the aim of respecting nature, regenerating the soils, promoting biodiversity.
Climate: a year of unpredictable weather, alternating between intense heat and violent storms. Some regions faced spring frost and summer hailstorms.
Yield: uneven.

« Dès le départ j’étais convaincu par les Caaaaaaat !! Déjà la façon de Christophe de le crier, à répétition, on savait qu’il y avait de l’idée… Je n’étais pas inquiet qu’au bout il y aurait des vins à l’image décalé et avec des convictions assumées. Et quand j’ai eu les premiers Caaaaaaat dans le verre, c’était une évidence. Des vins libres, originaux, mais accessibles et avec des rapports prix/plaisir imbattables. Dès le départ, les vins ont obtenu un franc succès au Sourire. L’étiquette interpelle et ensuite, nous, on peut expliquer le vin et les personnes derrière. Bien des fois des clients en achetaient en disant « c’est pour la blague » ou « mon amie adore les chats ». Puis, peu de temps après, ils revenaient en racheter car tout simplement ils avaient adoré le vin ! Finalement, il n’y a pas de meilleur compliment : quand c’est bon, on y retourne »
