Rosé wine from the South-West! A strawberry caaaaaaatgada in your glass.
Hosting a BBQ and want something other than cheap beer from the supermarket? Cosmic Caaaaaaat will delight your taste buds without taking itself too seriously. It’s like strawberry juice (don’t forget, it’s wine. Yes, there’s alcohol in it) to be enjoyed chilled with tapas, roast chicken, zucchini carpaccio... or whatever the hell you feel like!

red peppers grilled on the plancha with Espelette pepper, their sweet, lightly charred flesh settling onto the strawberry juice of the wine, with a light aioli and a squeeze of lemon, letting the freshness of the wine clean every bite.
Climate: A year of extreme weather, with early frosts, persistent rain, and intense mildew pressure. Some regions, like Corsica, enjoyed more favorable conditions, but many faced severe disease challenges.
Yield: Very low across most regions, with a national drop of around 18% compared to 2023. Burgundy, Jura, and the Loire were particularly affected, while regions like Gascony managed to maintain promising quality despite smaller volumes.
General Profile: Mixed. Gascony stands out with gorgeous juices, subtly aromatic, crisp, refined, and vibrant.
Vines planted on clay soils with Burdigalian limestone subsoils (hard limestone loaded with fossilized seashells).
Biodynamic farming. Hand and mechanical harvesting. Spontaneous fermentation with indigenous yeasts at controlled temperature. Aged on fine lees in fiberglass tanks. The quality of the grapes, the care taken during winemaking, and a microdose of sulfites added before bottling ensure the wine’s stability over time.
This wine was crafted by Christophe Kaczmarek and Michel Maestrojuan from Domaine Entras, in the heart of Côtes de Gascogne.
As always at Caaaaaaat, the wines are vinified, blended, bottled, and packed on the estate. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of it.
