Orange wine from Southwest France! Smooth gangsterism.
This skin-contact white wine, alias a white wine vinified like a red, alias orange wine, blazes like Sam "Ace" Rothstein's suits in Casino. The wine's aromatic expression is richly nuanced: orange peel, nutmeg, dried flowers... The palate is lively, carried by a tonic substance, tightened by a mineral finish. Energetic and structured, this is a superb orange wine paying tribute to the way white wines were made in Antiquity.

it opens frank and lively, a blade of amber light that wakes up the palate. Then the substance unfolds, skin tannin, blood orange flesh and bitter peel, it chews, it vibrates, it stands on its own, wear the colour of sunset and move like a wild cat. The acidity rumbles underneath, taut, electric, a nerve that runs through and refuses to fade. The finish races on, tonic, stretched, loooooong, a streak of fire that lingers well after the sip.
orange zest, sweet spices
charcoal-grilled octopus, its dense, smoky flesh biting into the skin tannin of the wine, with a smoked paprika emulsion and a few blood orange segments, to bring up the electric liveliness of the wine.
Parcels facing due west, planted on clay soils over limestone bedrock (Burdigalian).
Biodynamic viticulture. Manual harvest with grape sorting in the vineyard. The whole clusters macerate for 14 days before being gently pressed. Made with indigenous yeasts, the cuvée “O.G. Caaaaaaat” sees no inputs at any stage of the winemaking process. The grapes stand on their own thanks to their quality and the great care taken in handling them. O.G. Caaaaaaat comes to life without clarification, without filtration, everything happens naturally during the 12 month ageing in vat.

This wine was created by Christophe Kaczmarek, Baby Winemaker, with his Friend Michel Maestrojuan, winegrower at Domaine Entras, in Côtes de Gascogne.
As always at Caaaaaaat, the wines are vinified, blended, bottled and packaged at the estate. From vine to cellar, everything is done with respect, with the aim of regenerating the soils, encouraging biodiversity and respecting the humans who are part of it.
