Plains vineyards rooted in schist and shelly sand soils.

Biodynamic farming. Hand-harvested with grape sorting directly in the vineyard. Spontaneous fermentation with indigenous yeasts, vinified without added sulfites, bottled without filtration, clarification, or any additives. The only ingredient is healthy grapes.

Chenin Blanc from the Varenne du Poirier single vineyard, with grey-black schist soils from the Precambrian era (-610 to -570 million years). Vines planted in 2009. East-West exposure on a raised plain (Varenne also means plain in French). Aged for 6 months in 225L barrels, then goes for a short second ageing in a fiberglass tank. Bottled without addition of nothing. It’s a pure juice.

This wine is a four-hands, crafted by Christophe Kaczmarek and Jean-François Vaillant, natural winemaker from Domaine Les Grandes Vignes in Anjou.

As always at Caaaaaaat, the wines are vinified, blended, bottled, and packed at the domaine. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of it.
