Hand-harvested grapes, sorted directly in the vineyard. A blend of saignée rosé and direct press. Made with indigenous yeasts, Atomic Caaaaaaat undergoes vinification without any additives ; no chaptalization, no acid corrections, no coloring agents, no thickeners… In short, we respect ourselves, and we respect you.Aged in stainless steel tanks. A minimal dose of sulfur is added at bottling to ensure stability over time.

As always with Caaaaaaat, the wines are vinified, blended, bottled, and packed at the estate. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of it.
