Cool Caaaaaaat whispers the secrets of Auvergne volcanoes. Its golden colour, like a captive sunbeam, sparkles with exotic promise. This wine is the caress of a summer memory, the fleeting shadow of a ripe pineapple bathed in sunshine and tropical adventure. Each sip is a still journey, a slow escape, an invitation to drift away. Cool Caaaaaaat is the song of a golden wind, the murmur of vine leaves, the subdued light of a volcanic twilight.

A smooth fleshiness that gently unfolds its exotic aromas. The ripe pineapple flavour floods the palate with infinite delight. It is a slow dance of sensations, hugging the palate and finishing in a mineral envelope.

Granite terroir, with a majority of sand and a bit of clay, east-facing vineyard, average altitude of 450m.
Biodynamic viticulture. Hand-picked harvest, with grapes sorted on the vine.
Direct pressing, light settling, spontaneous fermentation (indigenous yeasts) in 500L barrels (4/5) and concrete tank (1/5), vinification without added sulphites, bottling without filtration, addition of a micro-dose of sulphites before bottling (<10mg/L). The ingredients used are simple: healthy grapes.
Blended after 7 months on fine lees, then bottled according to the cycles of the Moon.
This wine was created by Christophe Kaczmarek and Romain Paire, biodynamic winegrower at Domaine des Pothiers, in the Côte Ronnaise AOP (a part of Auvergne called the “Volcanic Loire”).
The wines are made, blended, bottled and packaged on the estate. From the vine to the cellar, everything is done with the aim of respecting nature, regenerating the soils, promoting biodiversity.
Climate: a year of unpredictable weather, alternating between intense heat and violent storms. Some regions faced spring frost and summer hailstorms.
Yield: uneven.

« Dès le départ j’étais convaincu par les Caaaaaaat !! Déjà la façon de Christophe de le crier, à répétition, on savait qu’il y avait de l’idée… Je n’étais pas inquiet qu’au bout il y aurait des vins à l’image décalé et avec des convictions assumées. Et quand j’ai eu les premiers Caaaaaaat dans le verre, c’était une évidence. Des vins libres, originaux, mais accessibles et avec des rapports prix/plaisir imbattables. Dès le départ, les vins ont obtenu un franc succès au Sourire. L’étiquette interpelle et ensuite, nous, on peut expliquer le vin et les personnes derrière. Bien des fois des clients en achetaient en disant « c’est pour la blague » ou « mon amie adore les chats ». Puis, peu de temps après, ils revenaient en racheter car tout simplement ils avaient adoré le vin ! Finalement, il n’y a pas de meilleur compliment : quand c’est bon, on y retourne »
