Terroir

Terraced vineyards on red clay soils with rocky limestone, sandstone, and schist subsoils.

Winemaking

Hand-harvested grapes, carefully sorted in the vineyard. The harvest is chilled for 24 hours before a gentle direct press. Sunny Caaaaaaat is vinified without any additives — no corrections, no tricks, just pure juice. Aged on fine lees in stainless steel and concrete tanks. A minimal dose of sulfites is added at bottling to ensure the wine’s stability over time.

Winemaker

Created by Christophe Kaczmarek in partnership with the beautiful Domaine de la Navicelle in Provence, 21 hectares of organically certified vineyards, cultivated with care for biodiversity and living ecosystems. The estate follows the fundamental principles of biodynamics.

Vintage 2022

Climate
Scorching heat, with record temperatures and persistent drought. The vines showed remarkable resilience despite extreme conditions.

Yield
Generally good, except in regions hit hard by drought like Languedoc and Roussillon.
