Supreme Caaaaaaat pays tribute to the goddess Bastet: half cat, half lioness, daughter of Râ, the Sun god. In her feline form, she embodies solar warmth, fertility, household bliss, and carnal pleasures. But awaken her wrath, and Bastet becomes a lioness, a ferocious protector, vengeful and unstoppable.
Produced only in exceptional vintages, Supreme Caaaaaaat is a rare wine: the chance to rediscover the true taste of Chablis, a revelation, or your next guilty pleasure.

oysters poached one minute in their own liquor, their fat, iodine-rich flesh meeting the breadth of the wine, with a yuzu beurre blanc and a little grated bottarga, to bring up the oyster shell and the Kimmeridgian salt of the wine.
Climate: A year of unpredictable weather, alternating between intense heat and violent storms. Some regions faced spring frost and summer hailstorms.
Yield: Uneven.

Single vineyards with a South exposure, planted on the beautiful Chablis terroirs with its famous Kimmeridgian limestone bedrock.
Manual harvest with the grapes being sorted on the vine. The harvest is entirely destemmed and gently pressed before undergoing a spontaneous fermentation between 18° and 20°C. Made using indigenous yeasts (“wild yeasts”), Supreme Caaaaaaat has no inputs throughout the entire winemaking process, no added sulphites neither. Matured for a few weeks on fine less in a stainless steel tank. Filtered wine (will of our partner). Aged in bottle for a year before being released.
This wine was created by Christophe Kaczmarek and Cyril Gautheron, winegrower from Domaine Gautheron in Chablis.
The wines are made, blended, bottled and packaged on site. From the vine to the cellar, everything is done with the aim of respecting nature, regenerating the soils, promoting biodiversity and respecting the people who are part of it.
