The idea is 3,000 years old, born from a pre-Roman civilization of great navigators and artisans: the Etruscans! Pyjama Caaaaaaat is a natural sparkling red wine, a style Christophe absolutely wanted to create after tasting some delicious, light, and delicate examples.

raspberry and redcurrant pavlova, its crackling meringue and light cream letting the tangy bubble of the wine pass through, with a few leaves of lemon verbena and grated lemon zest, to keep the fruit of the wine sparkling to the very end.

Volcanic hillside plots, East-facing exposure, vines aged between 20 and 40 years, planted on granite soils.
Hand-harvested with grape sorting in the vineyard. Pyjama Caaaaaaat is made in two parts: most of the Gamay grapes are gently pressed (fermenting in liquid phase), while a small portion macerates for a few days to extract color, round out the body, and add depth (fermenting in solid phase). Bottling happens during alcoholic fermentation, following the ancestral method. The wine is disgorged after 10 months of ageing on lees. Indigenous yeasts, no additives throughout the winemaking process. A small dose of sulfites is added at disgorgement (<10mg/L) to prevent excessive oxygen absorption (and the appearance of mouse taint).
This wine was crafted by Christophe Kaczmarek and Romain Paire, biodynamic winegrower from Domaine des Pothiers in Côte Roannaise (Auvergne).
As always at Caaaaaaat, the wines are vinified, blended, bottled, and packed at the domaine. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of the journey.
Climate A year of unpredictable weather, alternating between intense heat and violent storms. Some regions faced spring frost and summer hailstorms.
