Ah, Chenin. A grape variety we can do so much with: from sparkling to dry, sweet to mind-blowing.
It’s the emblematic variety of the Loire Valley, that incredibly diverse vineyard where soils shift and stories unfold. Take Black Anjou (Anjou Noir), black like the shist subsoil where Galaxy Caaaaaaat chose to land.

thirty-month comté broken with a knife, its tyrosine crystals and hazelnut fat melting into the silk of the wine's attack, with a slice of toasted country bread and a few fresh walnuts, letting the salt of the comté pull the thread of the wine's saline finish.
Plains vineyards rooted in schist and shelly sand soils.
Biodynamic viticulture. Hand harvest, with grapes sorted in the vineyard. Spontaneous fermentation (indigenous yeasts), vinification with no added sulphites, bottling with no filtration, no fining and no added sulphites. The ingredients are simple: healthy grapes.
Chenin Blanc: from the “Les Hauts Fleuris” parcel (vines within the Bonnezeaux appellation), planted in 2010, west-east exposure, on weathered schist and phthanite beds.
Vinified and aged in 400L casks for 12 months, racked and blended in stainless steel tank in July 2025, 4 months of finishing, bottled on 25 November (a fruit day in the biodynamic calendar).
This wine is a four-hands, crafted by Christophe Kaczmarek and Jean-François Vaillant, natural winemaker from Domaine Les Grandes Vignes in Anjou.
As always at Caaaaaaat, the wines are vinified, blended, bottled, and packed at the domaine. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of it.
