Orange wine, Georgian style! Looooooong maceration of Gros Manseng.
Producing such a wine requires the exact opposite of today's pace: patience, care, attention, observation, listening. In such a wine, the skins imprint the juice, the tannins set their rhythm, the tension dances. The substance explodes in a burst of pollen, a floral trajectory, a vibrant texture, a cosmic finish.

dry, the wine surprises with its density and depth, its sappy texture calls the forest, carrying the drinker along dreamlike paths lined with sequoias, citrus and pine. The finish stretches long, a cannon shot transformed into a bouquet of flowers.

Bigorre black pork belly slow-cooked then glazed, its melting fat and crisp skin standing up to the sappy texture of the wine, with a citrus condiment and a few toasted pine nuts, to reveal the pine bark and the cosmic finish of the wine.
A Gros Manseng plot surrounded by woodland, on clay soils over a limestone subsoil (Burdigalian: compacted layers of shells).
Biodynamic viticulture. Destemmed and whole-bunch harvest of Gros Manseng. Spontaneous fermentation (indigenous yeasts) in amphora. Nine-month maceration in terracotta amphora, draining and pressing, blending of free-run juice and press juice. Produced using indigenous yeasts, BazooCaaaaaaat sees no additives throughout the entire winemaking process. No filtration, no fining, no manipulation, no shortcuts. No added sulphites. Demeter certified and Méthode Nature wine.
This wine was created by Christophe Kaczmarek, Baby Winemaker, with his friend Michel Maestrojuan, winemaker at Domaine Entras, in the Côtes de Gascogne.
As always at Caaaaaaat, wines are vinified, blended, bottled and packaged at the estate. From vine to cellar, everything is done with respect, with the aim of regenerating soils, fostering biodiversity and respecting the people who are part of it.
