Looking for a definition of Pet Nat? Imagine an old-timey voice-over. Pull up a chair, here’s the scoop.

Pet Nat stands for Pétillant Naturel, a term that’s now internationally recognized. And yes, the word “natural” is there for a reason: nothing added, nothing taken away. Long before smartphones, caaaaaaat lasers 3000, or hoverboaaaaards, winemakers used a single fermentation process called the ancestral method.

Sometimes, the old ways are the best.

How does Pet Nat work?

The idea with Pet Nat is to catch the wine mid fermentation, like interrupting a busy bee, and basically say “Freeze, coffee break!”

(No, there’s no actual coffee in Pet Nat. Grandpa’s got jokes!)

Here’s what happens: while the wine is still fermenting in large vessels (tanks, barrels, amphorae…), it’s bottled before fermentation finishes.

What does that do? The rest of the fermentation takes place inside the bottle, and the natural CO₂ produced by the still active yeasts gets trapped like a well-kept secret until it tickles your taste buds when you pop it open.

Let’s get real, we simplified things a bit.

Winemakers know, during alcoholic fermentation, yeasts feast on grape sugar, turning it into alcohol and releasing carbon dioxide.

To make Pet Nat (short for “Pétillant Naturel”), this wild microbial party continues inside the bottle. Grapes’ natural sugars (hello fructose) keep feeding the yeasts, which keep releasing gas… which stays trapped.

The result? A naturally sparkling wine that fizzes from the inside out. Beautiful, right?
